The First Supper


Last night I was organized enough to cook our first meal in our new home. This was a big deal for me, because between the move, the wedding and work I have not cooked in about two weeks. Two weeks too long in my opinion.

I picked something simple but super delicious. I based it off this recipe, but didn't make the sauce, because I'm not that organized yet.

Instead, I just sliced up some avocado and topped the burritos with salsa and greek yogurt. Delish.


Sweet Potato Black Bean Burritos
Makes 5-6 burrito/enchiladas


  • 1 large sweet potato
  • 2 tbsp olive oil
  • 1/2 tsp cumin
  • 1 tsp smoked parika
  • 1/4 tsp cayenne pepper
  • Black pepper to taste
  • 5-6 whole wheat tortillas
  • 1 can black beans, rinsed and dried
  • 1 cup cheddar cheese 


  1. Preheat the oven to 450 degrees Fahrenheit. 
  2. Scrub and peel the sweet potatoes. Chop them into large, bite-sized chunks, about 1 to 1½-inches wide/long and ½-inch deep. Toss the sweet potatoes with the olive oil, cumin, smoked hot paprika, cayenne pepper and salt and pepper. Make sure they are lightly coated in oil on all sides. Pour the sweet potatoes onto a large baking sheet lined with parchment paper. Arrange the sweet potatoes evenly in a single layer. Do not overcrowd. Bake for about 45 minutes, flipping the sweet potato chunks halfway, until they are golden and caramelized around the edges. (Leave the oven on after they are done).
  3. Grab your tortillas. In the middle of each tortilla, pour ⅓ cup black beans down the center and top it all with ⅓ cup roasted sweet potato chunks. Sprinkle some cheddar on top. Pull one edge of the tortilla over to the center of the burrito, then pull the opposite edge over to overlap a bit. Gently roll the burrito over. Repeat with remaining burritos. Bake your burritos for about 5 minutes in a baking dish until the cheese is melted and the tortillas are lightly crisp.
  4. I topped with a little cheese, since I wasn't making the sauce, and then added salsa, greek yogurt and avocado (not pictured because I ate it too fast!!). 
This meal is healthy, easy, and most importantly - delicious! Enjoy!
